Good day to you all! Here it is, my first ‘Project Recipe Book’ post.
This cake was a delicious surprise. The recipe was handwritten (by me) on a piece of paper and for the life of me I can’t remember where it came from! It doesn’t matter mind you, all that’s important is that this cake is absolutely delicious. It is moist and soft, simply heavenly.
Apple and Cinnamon Tea Cake
- 95g butter, room temperature
- 1/2 cup sugar
- 1 tsp vanilla essence
- 1 egg
- 1 1/4 cups self-raising flour
- 1/2 cup milk
- 2 apples, finely diced
- 1 teaspoon cinnamon
Preheat oven at 190 degrees C
Cream the butter and sugar together in a large bowl. Add the egg and vanilla essence and beat well.
Sift flour, add cinnamon, then add to mixture in two or three goes, alternating with the milk. Beat until combined.
Add the diced apples and combine.
Bake for 30-35 minutes. Turn the oven off and leave the cake in for another 5 minutes. Remove from the oven and place on a cooling rack. Eat warm or cold.
