When I think about Christmas, I think about fruit cakes. Well, anything with dried fruit and rum really. So today, I’m sharing the recipe for the Best Fruit Cake ever, recipe that I got from my mother-in-law and that’s been tried, tested and approved about a billion times (give or take a few hundred thousands). It yummy and it’s extremely simple to make so there are no excuses NOT to make some :)
The Best Fruit Cake
- 2/3 cup mixed dried fruit
- 1/3 cup dried dates
- 1/2 cup sugar
- 1 cup water
- 40g butter
- 1 egg
- 2 cups self-raising flour
- 1 tsp mixed spice
- 1/3 cup dark rum (optional)
Place the fruit, dates, water, butter and rum in a saucepan. Bring to the boil and let it boil slowly for 3-4 minutes. Remove from heat. Leave on the side to cool.
When the mixture has cooled down, pre-heat your oven to 180 degrees. Add the egg to it and mix. Then add the flour and the mixed spice and mix well.
Pour the mixture into a greased and lined cake tin and bake for about 40 minutes or until it is golden brown on top and a skewer inserted through it comes out clean.
Eat warm or cold with a bit of butter spread on it.
